Celery Root Mash

I’ve been watching “MasterChef Greece” to improve my Greek, and I noticed they use a lot of σελινόριζα. I looked it up–it is celery root! So then I went looking for recipes and found this simple, yet delicious one.  I’ve modified it from this original recipe to make an even healthier version. Enjoy!
Super Healthy Celery Root Mash!
  • Prep time: 10 minutes
  • Cook time: 35 minutes
  • Yield: Serves 3-4 as a side dish
Ingredients
  • 1 pounds celery root
  • 1/3 cup goat kefir (or non-dairy milk as a vegan substitute)
  • 1 tablespoons coconut oil
  • Salt to taste
Instructions:
1 Bring a large pot of salted water to a simmer (1 Tbsp of salt for every 2 quarts of water).
2 Peel and cube the celery root, boil until soft: While the water is coming to a boil, peel the celery roots with a knife. Cut the celery roots into 1-inch pieces.
3 Drain the pot: Drain the pot and transfer the celery root to a blender.
4 Add the remaining ingredients to the blender:  Blend until you get the desired consistency. Add more liquid if you want a thick soup.  Add salt and pepper to taste.
This is a great dish for anyone going low carb. The goat kefir gives you probiotics. Coconut oil is more nutrient dense replacement for butter.
